Blueberry, Blackcurrant & Chocolate Immunity Bliss Balls

Ingredients:

  • ½ cup manuka or other liquid honey
  • ⅓ cup peanut or almond butter (or other seed/nut butter)
  • 2 tablespoons dutch (or regular) cocoa powder
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup white chocolate drops, melted

Method:

  1. Place the honey, nut butter, cocoa and vanilla in a large microwave-safe bowl. Microwave on high for 30 seconds, stir then return to the microwave for further 30 seconds.
  2. Add in the cinnamon, salt and Pure Delish Manuka Honey and Cashew Grain-Ola and stir to combine.The mixture should come together when pressed firmly between your fingers.
  3. To make balls: Take a tablespoonful of the mixture and roll tightly into a ball using wet hands. Repeat to make approx 12 balls. Place in fridge to set 30 minutes then roll in cocoa powder or drizzle with white chocolate. Return to fridge to fully set (2+ hours).
  4. To make bites: Line a slice tin (27.5cm x 17.5cm) with baking paper and press the mixture in with the back of a spoon. Place in the fridge to chill 2+ hours then drizzle with white chocolate. Once the chocolate has set, use a sharp knife to cut into 12 small squares.

Yield: 12 balls or bites

Serving size:1 ball or bite

Storage: Keep in an airtight container in the fridge.

Recipe Notes: The mixture will be sticky, use gloves or damp hands to press everything together.

Substitutions: Most nut or seed butters can be used, choose your favourite!

Honey can be substituted for ⅓ cup of pure maple syrup.
